Coconut of Fish







This is a delicious Esmeralda recipe that our ancestors prepared in fish that they brought from their fishing tasks, with a delicious coconut sumo, you can use any type of fish that you want, but usually the corvina, tilapia is used , cod among others. There are also many variations of this dish, such as shrimp shrimp, cons and others, which I will later publish in the course of the days.

Ingredients

For the dressing of the fish:



  • 2 ½ pounds of fresh fish fillets, cut into medium sized pieces
  • ¼ cup of lemon juice, about 2 lemons
  • 4 garlic cloves, crushed
  • 1 teaspoon ground cumin
  • 1 teaspoon ground annatto (or ground paprika instead)
  • 2 tablespoons of oil
For encocado:

    1 medium pearl white onion, diced
    2 peppers, diced
    4 kidney tomatoes, peeled and diced
    1 fresh coconut, liquefied water and coconut pulp, or a 14 oz. Can of coconut milk
    3 tablespoons coriander, finely chopped
    1 teaspoon ground coriander nuggets (or herb)
    Salt to taste
    pepper to taste

    To accompany:
    Rice and ripe plantains fried or patacones

  • Preparation:
         Dressing the fish:

  • Put the lemon juice, the crushed garlic, the ground cumin, the paprika, and the salt in a small bowl. Mix well to prepare the dressing of the fish.
  • Put the pieces of fish in a bowl and cover with the dressing, let it sit in the refrigerator for 1 - 2 hours.

           Coconut: 
  • Heat the oil to prepare a refrito or sofrito, add the chopped onions, tomatoes, peppers and salt, cook over medium heat for 5 minutes.
  • Add the pieces of fish and let cook for 5 minutes.
  • Add the coconut milk, fresh or canned, to the refried. Mix well.
  • Cover partially and let simmer for about 20-25 minutes.
  • Sprinkle with chopped cilantro or chop. Serve with rice and ripe fried plantains.
Note: 
The best way to prepare the encocado is with fresh coconuts, the coconut water is liquefied with the grated coconut meat. But, if you live in a place where fresh coconuts are not always found, you can use canned coconut sumo.
